Kott-Don 360 is a Korean BBQ specialist restaurant that boasts premium wet-aged meats. Founded by the team behind Flower Pig 360, they perform their signature “flower-cut” on their meats and age the meat for 360 hours (15 days) to achieve evenness of cooking, tenderness and concentration of the flavours of the meats.

We were excited to try the selection of meats that included Duroc Black Pork, Jeju Black Pork, and Hanwoo Beef (exclusive to the new Vivocity outlet!) You should definitely sign up for their free membership, which will grant you access to their member pricing for their food, including their set menus! For the rest of the review, I will mention only the member price, which I presume you will sign up for.

You enter a dramatic cave-inspired entrance and enjoy the Hanok architectural elements while being brought to your seat. Kott-Don 360 at Vivocity was a classy restaurant, spacious and very well-ventilated.

Throughout our meal, the staff will assist you to grill the meats to their optimal doneness, taking into account your preference. Service was attentive, non-intrusive and very professional. The staff know exactly what they’re doing with each piece of meat. Every cut of the meat is grilled perfectly, with a great sear but juicy and bursting with flavour in the centre.

Cheese Steamed Egg

The other side dishes of Pork Tangsuyuk and Cheese Steamed Egg were also unique and definitely surprising in that they were not treated like afterthoughts but were quality dishes on their own.

Beef Tartare Bibimbap

Additional Korean Dishes were available for us to try and we continued to be impressed. The Beef Tartare Bibimbap ($26++) was fresh, textural and flavourful. The Kettle-Pot Fish Cake Soup ($45++) was dramatic and comforting. The Seafood Pancake ($28++) was crispy and packed with loads of seafood. The cold Kimchi noodles ($14.90++) were exactly what you want between rounds of BBQ meats, cold, tangy and incredibly refreshing!

Now Jeju Black Pigs are native to Jeju Island, South Korea and Duroc Black Pork comes from the US (Duroc Pigs crossbred with Black pigs). The difference in taste being Jeju Black Pork tastes delicious while Duroc Black Pork tastes wonderful!

That’s all you need to know to enjoy every piece of pork belly, pork neck as the staff meticulously ensures the temperature of the grill with their infrared surface thermometers before grilling the meat to perfect doneness.

Pork belly is my all-time favourite cut of pork for KBBQ and the satisfying combination of grilled, crisp edges and soft buttery fat, melting away in your mouth while not being overly greasy was exactly how the pieces were when served to us.

They were equally enjoyable as Ssams, wrapped with lettuce, topped with ssamjang, garlic and kimchi. A Pork set for two starts at $68.90, while a non-Hanwoo Beef set starts at $125.90.

Premium, finely marbled, delicate beef from Korea. Not as fatty as wagyu in general but still beautifully marbled, its tenderness and beefy flavour is what draws diners all over the world to restaurants serving this premium option of beef.

The ribeye and rib fingers were lovely on their own. It was good as a Ssam as well but for meat this good, I would personally eat it on its own. The specially curated Hanwoo Beef Set starts from $268 with 450g in premium cuts, accompanied by Hanwoo Ssam Bap.

Good Korean BBQ is about more than expensive cuts of meat. The combination of the ambience, the lighter dishes and Banchan balancing the rich flavours as well as the drinks to complement the meal make the experience even better than the sum of the individual components.

When we left, surprisingly, we did not smell like barbecue at all but the flavours of Korean BBQ stayed with us in our minds that day all day.
