
Stepping inside Katsu By Kyu, it feels as if you have been transported from the busyness of Shenton Way into a traditional Korean hanok. Fitted out with a rustic oak interior, the 44-seat restaurant at OUE Downtown Gallery only makes use of premium Jeju pork and prepares its fresh-milled Korean rice every morning.
Katsu By Kyu: Jeju Pork Tonkatsu at OUE Downtown Gallery
Opened in July 2026, Katsu By Kyu is a tonkatsu specialist, making use of only Jeju pork which has a higher portion of red muscle fibres. Each cut undergoes 10 days of dry aging.

With an open kitchen at Katsu By Kyu, you can watch as the chef expertly trims the meat to order.
It is then breaded in panko mixed with freshly milled rice powder for a richer crust. The meat then gets deep fried before being finished over rice-straw charcoal.
Centre-cut Premium Jeju Loin
We had the Centre-cut Premium Jeju Loin ($42). The tonkatsu set comes with steamed rice, shredded cabbage and miso soup.
Biting in, the panko crust gave the cutlet a satisfying crunch and acted as a foil to the richly marbled meat inside. The pork was thickly cut but yet each bite was juicy and tender.
It comes served with a selection of condiments, as well traditional tonkatsu sauce, so that it can be enjoyed in different ways.
Other cuts available include the Classic Jeju Loin ($36) and Jeju Tenderloin ($35).
Panko Crusted Beef Short-rib Patty
We also tried the Panko Crusted Beef Short-rib Patty ($38). The patty comes sliced up, revealing the tteokgalbi inside.
The minced short-rib has a slight sweetness and chew. Pair it with kimchi for an even richer flavour.
Savory Pork Belly Udon
Another specialty at Katsu By Kyu is the Cold Flat Udon ($18). However, this was sold out by the time we arrived.
Instead, we had the Savory Pork Belly Udon ($15). This warm dish featured lusciously smooth udon with slices of pork belly in a 12-hour pork bone broth. It is a comforting bowl that warms the belly.
Additional Menu Items
To switch up the flavours, we also tried the Oysters ($6 for two pieces). This was also breaded and fried before being served with a dish of tartar sauce.
You can also order the Curry ($6) as an add-on to go with the rice. The curry was rich with small pieces of meat for an extra dose of heartiness.
Katsu by Kyu
“Kyu” means pursuit and the restaurant’s approach is to continuously refining ingredients, techniques, and details rather than settling for convention. This is embodied in their 10-day dry-aged Jeju pork to 12-hour pork broth and daily rice milling, ultimately reflecting a belief that great food cannot be rushed.
