Tucked within the glimmering bustle of Jewel Changi Airport, The Coach Restaurant feels like stepping into a stylish New York supper club hidden behind the energy of an airport destination. Warm lighting, polished interiors and an open kitchen humming with quiet confidence set the tone for an evening that felt both indulgent and surprisingly intimate.

What stood out throughout the meal was how the restaurant balances comfort with refinement. The dishes never tried too hard. Instead, they leaned into bold flavours, quality ingredients and thoughtful execution that created the kind of meal where every plate arrives with its own personality.

The evening began with The Black and White Bagel ($18), a simple yet elegant starter made with toasted NY bagel served with caviar and cream cheese. The salty richness of the caviar paired beautifully with the creamy cheese, while the soft bagel acted almost like a sponge, absorbing the briny pops of juice from each bead of caviar.

There was something almost poetic about the pairing with humble bagel meeting the quiet luxury of caviar, yet neither overshadowed the other. Instead, they came together in perfect balance, proving that great taste is less about status and more about harmony on the palate.

Maryland Crab Cakes ($30)

Then came the Maryland Crab Cakes ($30), easily one of the brightest dishes of the night. Golden brown on the outside with barely any filler within, the cakes were packed generously with sweet Old-Bay spiced swimmer crab meat using different parts of the crab for added texture and depth.

The accompanying tartare sauce brought everything together beautifully with tangy notes of dill, chives and subtle hints of pickle, all lifted with a squeeze of lemon that kept the dish lively from start to finish.

The Freshly Baked Corn Bread ($16) arrived soon after, still warm from the oven and served in a cast iron skillet. Lightly sweetened with maple syrup, it was well balanced by the savoury depth of gruyère cheese folded through the batter. Soft, airy, and deeply satisfying, it made for a comforting side that complemented the meal effortlessly.

Families dining with little ones will also appreciate the restaurant’s new kids’ menu ($12), which brings the same playful spirit to younger diners. Our little one chose the beef hot dog and was instantly delighted by the sheer size of it. Served generously with fries or salad, it felt less like an afterthought children’s meal and more like a proper dining experience tailored for kids.

For something more indulgent, The Chicken Bucket ($28) delivered pure comfort-food energy. Served with three house made sauces (hot honey, hot sauce and ranch) and five hefty drumsticks, this was fried chicken done unapologetically well.

The batter was thick and crunchy, while the chicken itself carried a gentle spicy kick beneath the crisp exterior. The sauces allowed diners to customise each bite, though honestly, the chicken held its own even without them.

Ribeye Steak

The Ribeye Steak ($90) was another highlight of the evening. Cooked beautifully to medium rare, the beef arrived with a gorgeous flame-charred crust while the marbled fat practically melted in the mouth.

Served alongside four condiments, each accompaniment offered a slightly different way to enjoy the steak. Particularly memorable was the café de Paris butter enriched with brandy, red wine and herbs, adding a luxurious depth that lingered long after each bite.

Alongside the steak, a side dish of Sautéed Garlic Mushrooms ($12) proved to be far more than a supporting act. A medley of button and shimeiji mushrooms brought earthiness and texture, complementing the richness of the beef effortlessly. Chopped garlic shoots added a gentle aromatic quality that gave the dish a subtle garlicky lift without overwhelming the palate.

Dessert arrived in dramatic fashion with the Flaming PB&J Bombe Alaska. The warmth of the brandy cut through the sweetness beautifully, while the peanut butter and jelly pairing delivered a nostalgic flavour combination elevated into something far more sophisticated. Rich, playful and comforting all at once, it was a fitting finale to the meal.

There is also something distinctly Coach about the entire experience. Beyond the interiors and aesthetic touches, the brand cleverly weaves its identity into the dining itself. From the tableware to the plating, Coach’s signature “C” logo is thoughtfully woven into the dining experience, serving as a polished extension of the brand’s lifestyle identity.

Beyond the food, the service elevated the experience even further. Special mention has to go to Chef Dom, whose calm command of the open kitchen on the night was genuinely impressive to watch.

Despite the visible pace and movement of service, he managed the flow seamlessly with his team, creating an atmosphere that felt energetic yet controlled. Service Captain Ezam also deserves praise for his attentiveness throughout the evening. Warm, observant and consistently thoughtful, he made the dining experience feel effortless from beginning to end.
