Hikiniku To Come, the famed hamburg “steak-on-rice” restaurant hailing from Tokyo’s Kichijoji district, has finally made its way to Singapore and the anticipation has been well worth it.

Since its founding in Japan, the restaurant has earned a devoted following for its singular focus on one dish done exceptionally well: the charcoal-grilled hamburg steak. Long queues outside its Tokyo outlets became a rite of passage for food lovers, and now Singaporeans no longer need a flight to find out what all the fuss is about.

We were invited for a sneak peek ahead of the restaurant’s official opening to see if it lives up to the hype.

At the heart of Hikiniku To Come’s concept are three guiding principles: Just Ground, Just Grilled, Just Cooked, born from co-founder Shohei Yamamoto’s belief that great food is best enjoyed the moment it’s made.

Just Ground means the Japanese beef is freshly minced on-site in the restaurant’s cold room. Just Grilled puts guests around the grill itself, so every steak is eaten straight off the heat. Just Cooked ensures the rice, prepared in batches in a traditional Hagama pot, is always served fresh.

Hikiniku To Come specialises in one signature item: charcoal-grilled hamburg steaks. The Restaurant offers a single signature set meal, the Hikiniku To Come set ($27.90), which consists of three pieces of hamburg steak, refillable rice, miso soup, and a raw Japanese egg. They also offer two sides: Raw Kimchi ($7.90) and Potato Salad with Minced Meat ($7.90).

We preferred the latter for its creaminess and unique mix of textures.

Upon ordering, guests are ushered to a seat around the charcoal grills, where the hamburg steaks are served individually and placed on a small personal grill. Nestled beneath each grill are pieces of binchotan charcoal, which keep the steaks warm while generating a steady, fragrant smoke as the meat juices drip onto the coals, subtly deepening the flavour with every passing minute.

A defining element of the Hikiniku To Come experience is its thoughtfully crafted recommended eating guide, which is presented as an illustrated card at the beginning of every meal. It details three ways to savour the three patties.

We were recommended to have the first patty as-is. The instructions simply read, “Take a big bite as it is” — and so we did. It was a revelation: first the crunch of the seared crust brings a wave of smoky charcoal aroma, then a rush of savoury juices, before finally sinking our teeth into the meat itself — perfectly seasoned, tender, and deeply satisfying. We rested the patty on the premium Japanese rice, letting the juices seep in before each bite.

The second piece called for a more intricate approach: grated radish and house-made ponzu vinegar. We topped the patty with the radish and added a splash of the vinegar. This bite was all about balance — the beef’s richness cut by the tangy vinegar, its softness offset by the radish’s gentle crunch.

Tamago Kake Gohan

For the final piece, we followed the eating guide’s instructions to make a Tamago Kake Gohan: beating the raw Japanese egg and pouring it over the patty and rice. The egg envelops everything in a luxurious, silky coat, rounding off the meal on a rich and comforting note.
