The meal began with the Aburi Watermelon Skewer Salad ($12.90) — a lively plate of mixed greens, cherry tomatoes and feta, anchored by flame-seared watermelon skewers. The light char gave each cube a firmer bite and a hint of smokiness, though going a touch further would have brought out even more sweetness. Finished with parmesan and a yuzu balsamic dressing on the side, it was a fresh, colourful starter that set the tone for what followed.
Next up was the Cheesy Carbonara Rice ($12.50), a creamy bowl where the egg is already folded into the sauce, giving each bite that silky, velvety richness. Shimeiji and shiitake mushrooms add pleasant texture, bacon brings savoury depth, and nori adds a subtle umami lift. It hits all the classic carbonara notes, though a little extra oomph would have made it unforgettable.
The Shakshuka Chicken Karaage Udon ($15.90) featured Inaniwa udon, thin, smooth, and springy with a delicate bite that made each mouthful effortlessly slurpable. The noodles were plated in a curried shakshuka sauce made from slow-cooked tomatoes, carrots, onions, garlic chili oil and curry spices.
While the presence of egg in the sauce was not obvious, the noodles carried the gentle warmth and body of a well-rounded dish. The chicken karaage was juicy and flavourful, though I would have preferred it left uncoated in sauce to retain its crunch.
Between bites, I kept going back to the Mixed Fruits Tea ($6.90), a light, refreshing cocktail of blueberries, raspberries, strawberries, orange, watermelon, lime, lemon, and grapefruit. Its crisp, fruity notes cut through the richness of the dishes and kept the palate feeling clean.
For something heartier, the Beef Steak Brunch Set ($22.90) showcased eggs in their own coddled form, with a Japanese onsen egg alongside mentaiko mashed potatoes. The thin sirloin steak stayed tender and nicely cooked, topped with a mushroom sauce that tied the plate together.
On the side came mesclun salad, cherry tomatoes, tater tots (always a win), and toasted sourdough — perfect for dipping into the coddled egg. It was an interesting mix of flavours and textures, even if the mentaiko remained a subtle note.
Dessert at Tamago-EN: Yuzu Soufflé Pancake
Dessert arrived in the form of the Yuzu Soufflé Pancake ($15.50). The egg in the batter gives it its airy, cloud-like texture, while yuzu cream and sauce bring a subtle tang, complemented by fresh berries. Each bite was light, fluffy, and a sweet reminder of just how versatile eggs can be.
