Tucked away in the CBD, MODU High at 96 Amoy Street is a new two-storey, Hanok-inspired Korean restaurant that brings a focused take on comfort dining to the city.

As a new branch of Singapore’s first samgyaetang specialist, it centres on premium ginseng chicken soup. The Amoy Street outlet offers an expanded menu of 12 signature broth flavours, including premium options like truffle and chicken seafood.

In addition to samgyaetang, they also offer expanded porridge options and shareable dishes.

We opted for the 2-Gather set ($118), which comes with a choice of tea, appetizers, two samgyaetangs, a shareable dish and dessert.

In Korean dining culture, it is common to begin with a warm tea to prepare the stomach and aid digestion. We ordered a pot of tangerine peel tea which was light and fragrant, with gentle citrus notes that cleanse the palate and set the tone for the rest of the meal.

The appetisers come as a mix of textures and flavours that complement rather than overwhelm.

The steamed eggplant is soft and tender, paired with cucumber for a refreshing crunch. A ponzu soy marinade ties everything together with a mild tang.

Cherry tomatoes are served with a balsamic drizzle and chopped basil, adding brightness, while the combination of honey, ginseng and garlic confit brings a deeper, slightly herbal sweetness. Each component is distinct, but works well together on the plate.

The mung bean pancake made with mung beans, bracken and chicken is best eaten hot and crispy. Its flavour is mild as expected but dipping it into the accompanying sauce helps bring a bit more life to each bite.

At Modu High, the main highlight is the samgyaetang—whole young chicken stuffed with glutinous rice and simmered with traditional ingredients like ginseng, jujubes and lotus seeds. While the menu features a range of interesting flavours, we chose to go with options we knew would be a hit with our little one.

The scorched rice samgyaetang stands out with its distinctive smoky aroma. The chicken is fall-off-the-bone tender, and the broth is comforting without being overly heavy. The perilla samgyaetang offers a different experience altogether. The perilla leaf gives the broth a fragrant, almost perfumed quality from the first sip, while the soup itself is richer and more milky.

Trying both side by side, each has its own character, and it is easy to see why the restaurant offers multiple variations. The dish is also served with a radish kimchi, watercress salad and more glutinous rice to add more variety to the samgyaetang flavors. For those who enjoy stronger herbal notes, a side of ginseng soju is also served to add an extra layer of depth to the broth.

A nice touch is the option to top up the collagen-rich broth, allowing you to linger a little longer over the meal.

Beyond what was included in the set, we also ordered a portion of the butter grilled abalone ($28). Served in its shell with a variety of grilled mushrooms on a bed of seaweed, the dish is nicely presented. The abalone is tender with a slight smokiness, and when eaten together with the mushrooms and seaweed, the flavours come together in a balanced, umami-rich bite.

Dessert rounds off the meal on a warm and comforting note, which was very much in line with the overall experience at Modu High.

The Korean honey cookie was an instant favourite at the table. Breaking into it, you get a satisfying crunch on the outside, while the inside remains soft and slightly chewy. There is a gentle sweetness from the honey that is not overpowering, making it easy to keep reaching for another piece. It is the kind of dessert that both adults and kids can enjoy.

Alongside it comes a homemade jujube and cinnamon punch. This one is noticeably bold—sweet, spiced, and warming. The flavours of red date and cinnamon come through strongly, almost like a traditional tonic. It is best taken in small sips, especially after the richness of the meal, and feels more like a digestif than a typical drink.

With its Hanok-inspired setting, nourishing broths and thoughtful pacing, MODU High offers a meal that feels both comforting and restorative. It is the kind of place to visit when you are looking to slow down, enjoy a warm bowl of soup, and spend a little more time at the table.

If you are planning a visit, it is worth noting that queues can form during peak hours. With no reservations, it helps to come early or be prepared to wait a little, something that works best if you are treating the visit as part of a longer outing rather than a quick lunch stop. If you do not mind the wait, it is one to add to your list especially on a day when a hearty, wholesome meal is just what you need.
