
Taking over the prominent spot where Privé once was, Sabòr is the hottest restaurant you need to be spotted in right now. As we made our way to the prominent spot in the CHIJMES courtyard, we find a vibrant, energetic restaurant, filled with spirited and friendly staff, taking care of very happy and excited patrons.
The energy in the room is palpable and the service staff were excellent as they sorted out a reservation mistake (my fault) and took our orders without breaking their stride.

It is a 100-seater restaurant, split evenly indoors and outdoors. Happy Hour starts at 4.30pm daily till 6.30pm and they will continue to ply you with excellent food all the way till 12am, midnight every night.
You can start off with a glass of Sangria Roja, which I would suggest is a nearly compulsory starting point to the meal that you are about to partake. There are also plenty of options from the cocktail bar, wines, beers and spirits to accompany you through the evening.
Starting Line-up
We were off to a start with the Bread & Tomatoes ($12), which was simply good bread, good tomatoes, seasoned well and finished with extra virgin olive oil. A humble but iconic snack, announcing clearly to us their intention of pursuit delicious food with quality ingredients and natural flavours.
Classic Tapas
We were treated to four of their classic Tapas, which were diverse in flavour and texture, making you want to eat and drink more. The energy and the lovely conversations all around owe much to these little, small plates, meant for sharing and gathering. The experience of communal eating and culture, Spanish style brought a casual, easy-going atmosphere of conversation and enjoyment.
The first two were the Croquette Jamón ($4/pc), a crispy deep-fried bite filled with a creamy Serrano ham béchamel (need I say more?), as well as Croquette Spicy Crab ($4/pc), a more modern take, packed with sweet delicate crab flavour and a gentle heat.
Next, was a Bikini Sandwich Sobrasada, Honey & Cheese ($18), an absolute favourite. A bikini sandwich (named after the nightclub which popularised this sandwich), grilled till crisp, filled and covered with melty cheese and drizzled with honey. A wonderful take on this classic Tapas that I could never have enough of.
Lastly, Chicken Wings ‘Dirty Pepe’ ($18), which were sticky, indulgent fried chicken wings coated in a bold, smoky-spiced sauce.
Verduras – Vegetables
What a good way to get my two servings of vegetables today, from the Verduras (Spanish word for vegetables) section in the menu!
Potatoes ‘Bravisimas’ ($16) seems to be an amped-up version of Patatas Bravas, a classic Spanish dish of fried potato cubes served with a spicy tomato sauce (salsa brava) and aioli.
Calçots Tempura & Romesco ($16) is spring onions fried in tempura batter served with Romesco sauce, a different presentation than the usual grilled version.
The Mains Attraction – Paellas and Charcoal Grill
It was so hard to decide which to go with. We were offered the options of Pork & Scallops ($36) or Grilled Wagyu Beef ($48) Paellas for this media tasting and ultimately, the staff’s description of the the Wagyu Beef, grilled to perfection on Binchotan charcoal, then placed atop the luxurious, sensuous Paella, ready to be incorporated and assimilated, was the deciding factor.
The paella base was a classic, flavourful layer of rice, rich stock, olive oil, tomatoes, peppers, a green herb sauce and dollops of rich, creamy and nearly cheesy aioli. The Wagyu beef over it was a nicely grilled piece of steak, still juicy, pink and tender in the centre. It looked so good and tasted so great in a mouthful, the flavours complementing and accentuating each other.
For the other main course, we went with Crispy Pork Belly, Green Apple ($36). Juicy pork belly with nicely rendered fats and crispy pork belly skin. I would be glad to come back to try the other items on the menu, such as the Iberico Pork Sliders ($9/pc), Grilled Barramundi ($34), Lamb ($39), a 400g Angus Beef Steak ($68) and Grilled Chicken ($32).
Don’t miss the Desserts
Desserts were such a treat! The Crema Catalana with Cookies ($14) is a lemon-infused silky custard, topped with a thin, caramelised sugar crust (like a crème brûlée), with crumbled cookies hidden underneath. Sweet, soft and creamy custard, brightened with the tangy citrus flavour, contrasted with the crunchy and rich cookies.
The Churros with Chocolate ($12) were fully golden and crispy outside, the batter light and still slightly soft on the inside. Dusted with sugar and served with a very dark chocolate sauce, it was as good as it gets.
Our Take on Sabòr
Authentic flavours, delicious food, warm hospitality and a beautifully decorated indoor and outdoor space. Sabòr has hit the ground running, and you must not miss it the next time you are at CHIJMES for a meal.
