·       Honey Lavender Dry Rub Roasted Turkey (4kg)
·       Figs & Balsamic Glazed Slow-baked Salmon (700g)

The Honey Lavender Dry Rub Roasted Turkey is definitely a fan-favourite for the festive season. The turkey is house brined overnight and then slow roasted to achieve the tantalizing flavours accented with dried lavender and spices.

Bourbon & Apricot Glazed Ham

The Bourbon & Apricot Glazed Ham was a charming tender and smoky centrepiece that had the ham glazed with a blend of bourbon, apricot jam, Dijon mustard, brown sugar, and honey. We really liked the depth in flavours presented by this festive staple dish and kept reaching for more.

Australian Short Ribs with Gremolata

If you are going for tender meat with herbal overtones, then the Australian Short Ribs with Gremolata would be ideal for you. Braised until fork-tender, the short ribs are infused with robust flavours and finished with a fresh gremolata of herbs, lemon zest, and garlic, which creates a nice contrast to the richness of the meat.

Figs & Balsamic Glazed Slow-baked Salmon

The Figs & Balsamic Glazed Slow-baked Salmon was a beautiful colourful display that comes in as a seafood option amidst the red meats. We were slightly disappointed, especially after having tasted the other delectable carvery options, as we were hoping for freshness and sweetness in the meat.

While the meat was soft and well-seasoned, we personally felt that the seasoning was slightly overpowering in contrast to the delicate essence of the meat. The pomegranate seeds and crushed pistachios offered a gamechanger in textures, but seemed to overembellish the dish.


Sides to Complement the Spread

Mac & Cheese

Savour festive sides like the Mac & Cheese, the Barley Salad with Miso Sesame Dressing and the Sage & Sausage Stuffing, each portioned to serve 3 to 4 persons. The Mac & Cheese was clearly a classic that clicked with most people, as it was gone before we could go back for refills.

Fried Brussels Sprouts with Pancetta

The surprise show stealer for us was the Fried Brussels Sprouts with Pancetta which was as its name describes, fried Brussels sprouts were tossed with smoky pancetta, dried cranberries, and herb panko. The resulting synergy in savoury and smoky nuances in the meat and subtle sweetness infused into the delightful crunch that each bite brought.
