DRIM Gold, at WEAVE Mall at Resorts World Sentosa, serves a premium dining experience with choice cuts of Korean beef (hanwoo) and Jeju black pork, all in a cave-meets-hanok setting.

DRIM Gold is the brand’s second outlet after its first at Mandarin Gallery, DRIM Korean Steak House.

DRIM Gold derives its name from deu-rim or 드림, a Korean phrase that signifies “giving” with respect and sincerity. It is this approach that seems to underpin the warm and friendly service that we experienced at the restaurant.

Homely interior at DRIM Gold

Even though the restaurant markets itself as a cave-themed restaurant, once we had entered into the dining area, we felt as if we were in a homely, yet modern, hanok instead. 

Roasted Sunchoke Tea

We began our meal with some warm tea. The Roasted Sunchoke Tea had earthy and nutty notes that tasted toasty and quietly comfortable. We also tried the Nightgate Tea, which tasted lighter and, according to the menu notes, “promotes energy”.

With appetites whetted by the tea, we were ready to begin our meal proper.

First to arrive at the table was Scampi with Kimchi ($77 for three pieces). Served fresh, sashimi-style, the scampi were torched at the table to bring out the flavour. They paired with kimchi XO sauce that contrasted the sweetness of the scampi with the umani-ness of the sauce.

Next came the meats – a selection of beef finger and Jeju pork collar.

Available beef cuts range from Prime Short Rib ($58/100g) to Wagyu Ribeye ($177/300g), with a minimum of two portions required. Pork cuts include Black Pork Belly ($35/100g) and Marinated Pork Collar ($75/200g), with a minimum of two portions required.

There are a number of ways to enjoy these prime cuts. They can be paired with Smoked Maldon Salt, fresh wasabi, pickled radish or homemade kimchi. 

However, the two most interesting ways to enjoy the meats were with Tofu Watersnail GangDoenJang and with Pickled Wild Garlic Leaves. 

 

 

Tofu Watersnail GangDoenJang

The Tofu Watersnail GangDoenJang had a deep umami and saltiness from fermented soybean paste that was complemented with slightly earthy notes from the watersnails. The chunky sauce added a nice dimension to the meat. 

Pickled Wild Garlic Leaves

It was our first time trying Pickled Wild Garlic Leaves. It had a vinegary flavour and can be used to make a ssam or wrap with the meats. Just remember to put into the mouth “all-in-one” to savour the full flavour.

Rounding off our meal was another dish that we had not tried before – Eobok-Jaengban ($138), which roughly translates to a mix of meats in a large tray or platter. The lavish platter of thinly sliced beef brisket, along with various vegetables, arrived at the table and was placed on top of a stove. A clear broth was added, and the hot pot was left to simmer.  

 

 

Eobok-Jaengban comes from the Pyeongan Province and is associated with special occasions and a way to welcome honoured guests with an air of dignity. Therefore, it felt entirely in keeping with DRIM Gold’s philosophy of respect and sincerity.

In contrast to more typical Korean dishes that often come loaded with strong and rich flavours, Eobok-Jaengban was “quieter” and sophisticated. This is not to say that it was not flavourful; instead, it was more understated and allowed the flavour of the beef and the clear broth to speak for itself.

A meal at DRIM Gold is one that is designed to be shared. With its warm decor and equally warm service, DRIM Gold invites warm conversations over premium Korean dishes and flavours and the menu is priced as such.

In addition to the dishes that we tried, other signature dishes on the menu include DRIM Signature Noodles, Chilled Korean Noodle, Freshly Shucked Oyster and Beef Tartare.
