Singapore’s Jewel Changi Airport is now home to Gwangjang GAON, the first overseas outlet of a much-loved traditional Korean restaurant from South Korea. Known for drawing long queues and serving classic dishes prepared with fourth-generation recipes, Gwangjang GAON is helmed by respected culinary expert Professor Hyo Soon Park. With its reputation for authenticity and flavour, the restaurant brings a taste of Korean heritage to a wider international audience.

Gwangjang GAON, also known in South Korea as Naru GAON or Gwangjangdong GAON, takes its name from the street where the first restaurant opened. Since then, it has grown into a respected brand for preserving and promoting traditional Korean recipes. Founder and chef-researcher Professor Park Hyo Soon has spent decades researching and teaching Korean cuisine, appearing on Korean television and contributing significantly to its global understanding.

Holding multiple academic degrees and a Doctorate in Business Administration, Professor Park leads with the belief that “healthy taste leads to a healthier world”. In Korea, she also runs her own Culinary Culture Research Institute and is involved in several social and legal advocacy roles.

Its popularity in South Korea is reflected by its frequent celebrity visits. Among the restaurant’s regular patrons are well-known names such as Han So-hee and Lee Jung-jae from the Netflix series Squid Game. Now, diners in Singapore have the chance to experience the very same dishes beloved by these stars.

Gwangjang GAON’s Signature Dishes

With time-honoured recipes in a cosy, family-friendly setting, here are some of the dishes from Gwangjang GAON’s menu that we tried:

Deulgireum Makguksu

Deulgireum Makguksu

This cold buckwheat noodle dish, Deulgireum Makguksu, is a refreshing option that combines simplicity with bold flavour. The noodles are drizzled with aromatic perilla oil, then topped with crunchy perilla seeds and fresh perilla leaves. A gentle touch of cheongyang red pepper adds a slight heat, balancing out the nutty and earthy notes of the dish.

Chogye-Nangche

Chogye-Nangche

Chogye-Nangche is a cold Korean chicken salad dressed in a tangy vinegar and mustard-based sauce. Served chilled, this dish features tender slices of chicken paired with a vibrant dressing that provides some sharpness and zest. We enjoyed the combination of textures and flavours and the dish was really nice and refreshing overall.

Modm-Jeon

Modm-Jeon

Jeon, or Korean-style savoury pancakes, are a staple in traditional Korean dining, and the Modm-Jeon at Gwangjang GAON was a dish that we really enjoyed. This assorted pancake platter includes golden-brown pieces of shrimp, pollack, zucchini, ground pork, and crab surimi. Each piece is pan-fried and served with a classic soy-vinegar dipping sauce. Handmade daily using Professor Park’s family recipes, these crisp yet tender fritters showcase both craftsmanship and flavour. Jeon is rarely found in restaurants today due to the time-intensive preparation, but it can be enjoyed at Gwangjang GAON.

Bossam

Bossam

A signature dish at Gwangjang GAON, Bossam features tender slices of braised pork belly, gently boiled in a rich, aromatic broth. The broth itself is made using a 15-year-old mother stock brought from Korea, which allowed the meat to have deep and layered flavours. The pork is served with fresh cabbage, traditional condiments such as fermented shrimp sauce and ssamjang, and crisp homemade kimchi. We think this dish is a must-try when sharing and family meals.

GAON Galbi

GAON Galbi

Another signature offering is the GAON Galbi, a premium beef short rib dish that combines traditional flavour with modern technique. The ribs are marinated in a blend of over 20 herbs and ingredients, then cooked sous-vide for over 24 hours. Once ready, they are lightly torched to add a hint of smokiness and served on a Hojokban, a traditional Korean tray once used in royal dining ceremonies. This was probably one of the favourite dishes at the table and we loved how tender, flavourful, and aromatic the meat was.

Classic Bibimbap

Classic Bibimbap

No traditional Korean meal would be complete without Bibimbap. At Gwangjang GAON, the Classic Bibimbap is prepared with over 13 ingredients, including mixed vegetables, marinated meat, a fried egg, and spicy sauce. Diners can choose between red pepper paste, soybean paste, or a blend of both for seasoning. Each bowl is colourful, hearty, and satisfying.
